Not quite a Sunday Roast

Now I know that I haven't posted anything for two days, that is because I haven't cooked anything! Shock horror! I have been eating delicious food though.

Thursday night was a roast chicken. A roast, I hear you say, on a thursday? I know shocking, but in actual fact was a really delicious smoked paprika smothered chicken, served with comforting mashed potatoes and swede and some sweetheart cabbage for a bit of crunch.

The chicken had been painted all over with a mix of smoked paprika and olive oil, it made a thick paste, and was roasted first with no foil over the bird, for about 15mins, then covered for the majority of the cooking time, then uncovered for the last 15mins to get a nice crispy skin. We had the cooking juices as a sort of gravy, the smoky spice was a lovely contrast against the sweet buttery swede and potato. What is even better the fn things to do with the leftover chicken, which I will update you on later.

Last night's feast cooked by my friend H was a luxurious butternut squash lasagne with bursts of cherry tomatoes dotted through it. Served with a herb salad and garlic bread (always yummy). What was for dessert? I shall tell you, the most meltingly soft, creamy, buttery, caramel-y BANOFFEE PIE. Oh it was just amazing. H is especially good at all things pudding and cake related and this was no exception.

So that is why I haven't been posting about my own cooking.
